TL;DRBeards and hair probably wouldn't simply vanish under helmets but would use trimmed versions, since gameplay and fun take priority over strict realism.
I wouldn't say it necessarily has to disappear. I think situations like that, you need things. Same for hats. If you have long hair and you put a hat on, they need a version of the hair that is cut off at the hat line to fit it. So beards, I imagine, would just be the same.

No, I think it would just go to a more trimmed version of that beard. Because it's either that or you don't get beards at all.
Quite often in Star Citizen development, we work towards the realism, making things as real as possible, and then you have to adjust for proper gameplay.
So it has to be fun and reasonable to have it. Because realistically, if you had a giant beard, it probably wouldn't fit in a helmet, so it's just that guy does not go in space.
